Lemon Poppy Seed Muffins Recipe
These Lemon Poppy Seed Muffins are really good and fast to fix. Am I on a muffin recipe kick? You bet’cha!
When it starts getting cooler out, I make good use of my oven. I like warm things to eat first thing–in our 110 year old Victorian home, it’s almost mandatory!
I like using a Powdered Sugar and Lemon Juice Icing over the top of them. Yeah, maybe not the most healthy, but it sure does brighten up breakfast. I have omitted the Lemon Peel because we didn’t have any on-hand, and it has still tasted great.

Muffin Recipes: Lemon Poppy Seed
Ingredients
Muffin Ingredients:
- 1 Cup Lemonade
- 1/2 teaspoon Lemon Zest, Grated
- 1/4 Cup Poppy Seeds
- 1/4 Cup Butter
- 1/4 Cup Sugar
- 1 Egg
- 1 teaspoon Vanilla Extract
- 2 Cups All-Purpose Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
Glaze:
- 2 Tablespoons Lemon Juice
- 2 teaspoons Sugar
Instructions
- 375* Oven.
- Heat Lemonade over medium-high heat until about to boil. Remove from heat. Stir in Poppy Seeds and Lemon Zest. Cool.
- In a bowl, combine Butter and Sugar. Mix well. Add Vanilla Extract and Egg. Mix well.
- In another bowl, combine remaining dry ingredients. Add to Butter mixture. Mix well.
- Add in Lemonade mixture. Stir to moisten.
- Spoon into greased muffin tin (this one sticks to those paper wrappers). Fill 3/4 full.
- Bake 20-25 minutes or until golden brown.
- Meanwhile, in saucepan, combine lemon juice and sugar over medium-high heat. Stir constantly until sugar has dissolved.
- Tunnel surface of each muffin and drizzle over the tops.
- OR combine powdered sugar and lemon juice and drizzle over the top.
