I love to make different muffin recipes for our boys in the morning–and this recipe for banana muffins is one of the best!
Packed full of banana flavor, they not only love to see these on the menu, but they love to help make them, too.
Ripe bananas are the key here. As with all muffins, try not to over-mix the batter. That way you are almost guaranteed a moist, flavorful banana muffin!

Notes
I like to use a bit of Wheat Flour in place of All-Purpose whenever possible. I forgot to re-test that substitution but I usually use 1 1/2 cups All-Purpose Flour to 1/2 Cup Wheat Flour.
Ingredients
- 1 Cup Sugar
- 2 Eggs
- 1/2 Cup Margarine or Butter, Softened
- 1 teaspoon Vanilla Extract (optional)
- 2 Cups Flour
- 2 Tablespoons Wheat Germ (optional)
- 2 teaspoons Baking Soda
- 3 or 4 Bananas, Mashed
Instructions
- 425* oven.
- Line muffin tin with cupcake papers.
- In bowl, cream together the Sugar and Eggs. Add in Margarine (or Butter) and Vanilla Extract and blend well.
- Add Flour, Wheat Germ, and Baking Soda and blend just until mixed.
- Add in Bananas and blend just until mixed.
- Spoon into prepared tin, filling to the top.
- Bake 15 -- 20 minutes or until golden brown.
