Does anything say “spring” more than these pretty, delicate-looking rhubarb muffins? Yes, these are added to my list of best muffin recipes. One taste and you will add them to yours, too. When Spring hits, I count down the days until that first batch of farm fresh rhubarb hits the farmer’s market. Fortunately, I live within walking distance to my local farmer’s market so I can get in, get out, and get the goods before they are completely sold out.
I admit that I went a little overboard. I bought a lot of rhubarb. A plethora of rhubarb. A ton of rhubarb. I had a good reason. You see, last year I missed out on rhubarb. Between my traveling and the weather, I only managed a handful of baked rhubarb goods before the market ran out. That is not a good thing. I was bound and determined to get my rhubarb fix this year. So, I purchased plenty of rhubarb. Then? I turned around and went back to the farmer’s market three days later for more.
To some, that may seem like a whole lot of rhubarb but I know better. See, as much as I love strawberry rhubarb pie and, indeed, blueberry rhubarb pie, I discovered that there are far more delicious things that can be made with the seasonal fruit. Veggie. Whatever it is. These muffins are included in that list of good things to make with rhubarb. We seem to think of rhubarb as an addition to our favorite desserts. Who knew it could holds its own in a breakfast favorite? We do now and I am glad for it.
These rhubarb muffins are as pretty as they are tasty. As you can, it makes a beautiful muffin. Everything about it is perfect. It looks like something served at a ladies tea or luncheon, don’t you think? Pair it with the honey lemon butter to take it over the top. Have you never made a flavored butter before? I have very rarely. I don’t know why. They are so easy yet seem like something time consuming and fancy.
Now that we’ve sampled these delicious rhubarb muffins, I can tell you that I’ll be extra anxious for fresh rhubarb next year. These are so different and so very, very good. Maybe I should tone down the amount of rhubarb I purchase this time around. Nah…I’ve got too many things to make!
We like them with and without the Honey Lemon Butter–but it certainly makes it extra impressive! Serve them on a nice platter and “wow” your family. Our boys enjoyed these (and, I admit, they were surprised by how much they liked them). Just like the rest of us, they thought of rhubarb as a pie sort of thing.
