This Cauliflower Soup Recipe is so simple and delicious it will make its way to your table again and again!

Using fresh cauliflower, vegetables, and making a basic roux, this recipe for Cauliflower Soup really kicks it up a bit.

I tend to add more vegetables just because we like a thicker soup, but really, this soup recipe is pretty fool-proof. Enjoy!

Cauliflower Soup Recipe

A slight adaptation from a Taste of Home 2003 recipe, this tasty and filling Cauliflower Soup recipe will be a huge hit in your home, too!

Ingredients

  • 1 Medium Head Cauliflower, Broken into Florets
  • 1 Medium Carrot, Shredded
  • 1/4 Cup Celery, Chopped
  • 1/2 Onion, Chopped
  • 2 1/2 Cups Water
  • 2 teaspoons Chicken or Vegetable Boullion
  • 3 Tablespoons Butter
  • 3 Tablespoons Flour
  • Salt and Pepper
  • 2 Cups Milk
  • 1 Cup Cheddar Cheese, Shredded
  • 1/2 to 1 teaspoon Buffalo Sauce (Optional)

Instructions

  1. Combine Cauliflower, Carrot, and Celery and bring to a boil.
  2. Reduce heat, simmer for 15 minutes.
  3. Meanwhile, melt Butter and add Onion. Saute until tender.
  4. Mix in Flour. Add Milk carefully. Bring to a boil, stir, and cook for two minutes or until thickened.
  5. Stir in the Cheese and the Buffalo Sauce, if desired.
  6. Stir into the Cauliflower and vegetables mixture.
  7. Serve.
