Blueberry Muffin Recipe

Blueberry Muffins fresh from the oven? I’m so there. Especially when they have just the right amount of blueberries–like these.

Blueberry Muffins

While I admit Blueberry Muffins were never my favorite muffin, after the tweaks I’ve made to this recipe? It’s right up there with my all-time favorites!

Who knew that wheat flour in anything actually tasted good? The orange peel only enhances the blueberry flavor while the wheat germ gives it a hint of nuttiness –and adds a slight boost in nutrition! I love this stuff.

little Indiana’s Blueberry Muffin Recipe

1 Cup Wheat Flour
1/2 Cup All-Purpose Flour
3/4 Cup Rolled Oats
2 Tablespoons Wheat Germ
1 1/4 teaspoon Orange Peel (to taste, start with 1 teaspoon and go from there)
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1 Egg
3/4 cup Milk
1/2 cup Brown Sugar, packed
1/4 cup Veggie Oil
1/2 teaspoon Vanilla Extract
3/4 cup Blueberries (Fresh or Frozen)

How To Make Blueberry Muffins

400* oven.

Grab the paper liners or grease 12 muffins cups so your blueberry muffins won’t stick. Set aside.

Combine Flours, Oats, Wheat Germ, Baking Powder, Baking Soda, and Salt in bowl. Make a well in the center.

Combine Egg, Milk, Brown Sugar, Veggie Oil, and Vanilla Extract in another bowl. Combine with dry ingredients and stir until moistened.

Fold in blueberries.

Spoon batter into muffin cups. Fill to the tops.

Bake for 16 to 20 minutes (depending on your oven).

Cool in tin for 5 minutes. Remove from cups and serve warm.

Blueberry Rhubarb Pie

If you’ve been looking for a great pie to serve, you can’t go wrong with Blueberry Rhubarb Pie! This great recipe combines the mouth watering goodness of sweet blueberries and tart rhubarb…oh, yeah! I am a huge rhubarb fan.

I admit it: I love the stuff and buy a ton of it from our favorite Indiana Farmers’ Market, freezing it for later…but even hubby and the kid agree: this is phenomenal!

For those of us who can’t make it to The Blueberry Festival this year, you can at least get your blueberry fill. It’s absolutely delicious and kid-approved.

Blueberry Rhubarb Pie

From Best of Country Pies
Serves 6-8

1 1/2 cups blueberries
1 1/2 cups rhubarb
1 cup sugar
1/4 cup flour
1/4 teaspoon salt
1 double pie crust, unbaked

Preheat oven to 450*. Bake pie for 15 minutes. Reduce heat to 350* and bake pie for 30-35 minutes longer (covering edges with foil if you need to) or until filling is bubbling and crust is golden brown. I like to serve this pie warm.

The Blueberry Festival: It’s a Berry Good Time!

The end of summer may pass by with little notice in some parts of the world…but not in Plymouth, Indiana who celebrates with The Blueberry Festival! Labor Day weekend marks the beginning of one of the top festivals in the Midwest with its annual Blueberry Festival.

Attracting hordes of people from states around, The Blueberry Festival, or Blueberry, is a major draw to little Plymouth.

Sure, I’d heard about how massive and wonderful the three days of Blueberry was, but didn’t get a chance to see for myself until last year. Just…wow!

Blueberry Festival Food

Bring on the deep-fried, artery-clogging goodness! Find everything fried and fabulous…and even a little strange. I mean, do we really need fried candy bars?

There are many, many food vendors: German, Polish, Italian, Greek, Mexican. You won’t be bored. But the star of the festival is everything blueberry!

What blueberry goodies did I see this year?

Blueberry-topped ice cream sundaes, blueberry milkshakes, blueberry cheesecake, blueberry cider slush, blueberry fudge, blueberry cobbler, pie, and more! It’s a blueberry bonanza!

After walking through the wall of tempting food vendors, you’ll start getting into the crafts, woodworking, and even blacksmith vendors.

This isn’t one of those things where you go in expecting to be amazed and instead it’s a disappointing bunch of yard sale cast-offs.

Sure, the guys selling “buy one get two free” are around, but so are antiques and art and loads of handcrafted goodness. I found a snazzy red lamp for $10!

Things to Do at The Blueberry Festival

There’s games, rides, a camp of Civil War Re-enactors, and a good selection of rides for kids. This time around they had a small roller coaster and the giant slide. There was even a fun house and circus train, just to name a few.

Blueberry Ice Cream at the Plymouth, Indiana Blueberry Festival

Probably one of the best and most unique attractions of The Blueberry Festival is The Hot Air Affair, the hot air balloon event. This was also the site of one of my first major writing gigs.

This annual Indiana town to-do attracts hot air balloon enthusiasts from all over the country and frequent launches just add to the whole atmosphere.

Little ones in particular think it’s pretty incredible. But then again, so do I.

A Tip from little Indiana

If you get a chance to go next year, take it! Here’s a time-saving tip from me: Park at Plymouth High School. All proceeds go to various school clubs and you get a free ride on The Tram.

Blueberry is big enough without adding a ton of extra walking just to get to the entrance!
