<h3><strong>Amish Recipe: Baked Oatmeal</strong></h3>
<p>I love it because it&#8217;s versatile&#8211;and because it smells like <a title="Cookies" href="http://littleindiana.com/tag/cookies/" target="_blank">cookies</a> while it&#8217;s baking! Think of it as your base to play with! Throw on fresh or dried fruit for a change of pace.</p>
<p>Nothing tastes better on a chilly morning, Summer or Winter! You know my Wheat Germ obsession&#8211;throw in 1/2 cup of that, too, if you want.</p>
<h4><strong>Amish Baked Oatmeal Ingredients </strong></h4>
<p>3 Cups Oats<br />
1 Cup Brown Sugar<br />
1/2 Cup Butter or Margarine, Melted<br />
1 Cup Milk<br />
2 Eggs<br />
2 teaspoon Baking Powder<br />
3-4 teaspoons Vanilla Extract<br />
Dash of Cinnamon (Optional)<br />
Fruit to Top (Optional)</p>
<h4><strong>How To Make Amish Baked Oatmeal </strong></h4>
<p>This is so easy to whip up. Ready? Preheat oven to 350*.</p>
<p>Melt butter.</p>
<p>Meanwhile, combine oats and brown sugar. Add in Milk, Eggs, and melted Butter. Mix well.</p>
<p>Add in Vanilla, Baking Power, and Cinnamon (if using).</p>
<p>Pour into greased 13 x 9 dish and bake 25-30 minutes. You know it&#8217;s done when edges are lightly browned, pull away from side, and it doesn&#8217;t look so wet.</p>
<p>This can be assembled the night before and baked the following morning to make breakfast super easy! I know, it&#8217;s nothing special to look at but&#8211;it&#8217;s so good!</p>

<p>Blueberry <a title="Muffins" href="http://littleindiana.com/tag/muffins/" target="_blank">Muffins</a> fresh from the oven? I&#8217;m so there. Especially when they have just the right amount of blueberries&#8211;like these.</p>
<h3><strong><strong>Blueberry Muffins</strong></strong></h3>
<p>While I admit Blueberry Muffins were never my favorite muffin, after the tweaks I&#8217;ve made to this <a title="Recipes" href="http://littleindiana.com/category/eat/recipes-eat/" target="_blank">recipe</a>? It&#8217;s right up there with my all-time favorites!</p>
<p>Who knew that wheat flour in anything actually tasted good? The orange peel only enhances the blueberry flavor while the wheat germ gives it a hint of nuttiness &#8211;and adds a slight boost in nutrition! I love this stuff.</p>
<h3><strong>little Indiana&#8217;s Blueberry Muffin Recipe<br />
</strong></h3>
<ul>
<li>1 Cup Wheat Flour</li>
<li>1/2 Cup All-Purpose Flour</li>
<li> 3/4 Cup Rolled Oats</li>
<li>2 Tablespoons Wheat Germ</li>
<li>1 1/4 teaspoon Orange Peel (to taste, start with 1 teaspoon and go from there)</li>
<li> 2 teaspoons Baking Powder</li>
<li> 1/2 teaspoon Baking Soda</li>
<li> 1/4 teaspoon Salt</li>
<li> 1 Egg</li>
<li> 3/4 cup Milk</li>
<li> 1/2 cup Brown Sugar, packed</li>
<li> 1/4 cup Veggie Oil</li>
<li> 1/2 teaspoon Vanilla Extract</li>
<li> 3/4 cup Blueberries (Fresh or Frozen)</li>
</ul>
<h4><strong>How To Make Blueberry Muffins</strong></h4>
<p>400* oven.</p>
<p>Grab the paper liners or grease 12 muffins cups so your blueberry muffins won&#8217;t stick. Set aside.</p>
<p><strong> </strong>Combine Flours, Oats, Wheat Germ, Baking Powder, Baking Soda, and Salt in bowl. Make a well in the center.</p>
<p><strong> </strong>Combine Egg, Milk, Brown Sugar, Veggie Oil, and Vanilla Extract in another bowl. Combine with dry ingredients and stir until moistened.</p>
<p>Fold in blueberries.</p>
<p>Spoon batter into muffin cups. Fill to the tops.</p>
<p><strong> </strong>Bake for 16 to 20 minutes (depending on your oven).</p>
<p>Cool in tin for 5 minutes. Remove from cups and serve warm.</p>

<p><em>little Indiana</em> and family headed to Martin&#8217;s Restaurant in <a href="http://littleindiana.com/category/littletowns/rennselaer/" target="_blank">Rensselaer, Indiana</a>.</p>
<p>We had heard that they have great breakfast&#8211;and I <em>love</em> eating breakfast out! Who&#8217;s with me there?</p>
<h3><strong>Martin&#8217;s Restaurant in Rensselaer, Indiana</strong><strong> </strong></h3>
<p>We drooled over the menu&#8211;lots of homemade goodness! I couldn&#8217;t decide what I wanted.</p>
<p>In the end? I chose Deanna&#8217;s Special Omelet: Swiss cheese, sausage, onion, and garlic with a side of hashbrowns and toast. Mmm!</p>
<p>Hubs got the Western Skillet. Eggs, green pepper, onions, and sausage and smooshed around to form the perfect storm of goodness (according to him).  Kid #1? He was fiending for French Toast and bacon.</p>
<p>Our waitress kept the coffee coming while we waited for our order. Martin&#8217;s Restaurant has the cutest mugs. Aren&#8217;t they just adorable little things?</p>
<h4><strong>Inside Martin&#8217;s Restaurant</strong></h4>

<p>There&#8217;s a lot of vintage tins, records, and movie posters on the walls of this <a href="http://littleindiana.com/category/eat/restaurants/" target="_blank">Indiana mom and pop restaurant</a> so there&#8217;s plenty to look at.</p>
<p>But the ceiling? It&#8217;s painted red. Bright red. Is it some marketing ploy to get folks to eat more? &#8216;Cuz the goodness of the cooking here is enough!</p>
<p>When the food arrived? I don&#8217;t know who Deanna is but I&#8217;d like to shake her hand. Can you say &#8220;delicious?&#8221;</p>
<p>Well, Kid #1 certainly said so&#8211;and we agree! There was probably a full five minutes of silence at our table.</p>
<h4><strong>Bottomline?</strong><strong></strong></h4>
<p>Our bill was reasonable, the food was fantastic, and we? Left with very full bellies! If I get a chance to go back to this <a href="http://littleindiana.com/category/littletowns/" target="_blank">Indiana town</a> for more Martin&#8217;s Restaurant goodness, I&#8217;ll take it&#8211;I&#8217;d like to give their homemade biscuits and gravy a go.</p>

Santa&#8217;s Lodge in <a title="Santa Claus, Indiana" href="http://littleindiana.com/category/littletowns/santa-claus/" target="_blank">Santa Claus, Indiana</a> has Kid #1 pretty much convinced that that is where Santa lives. As a matter of fact, he refers to the town as &#8220;Santa Claus little Indiana.&#8221;</p>
<p>Looking back, <em>why wouldn&#8217;t he think that?</em></p>
<h3><strong>Santa in Santa Claus, Indiana</strong><em><br />

<p>We had dinner with Santa, we had <a title="Story Time with Santa" href="http://littleindiana.com/2010/12/santa-claus-indiana-story-time-santa/" target="_blank">story time with Santa</a>, and would you believe we even had breakfast with the guy?</p>
<p>Mrs. Claus has to be lonely.<em> little Indiana</em> and family saw Santa so many times over the course of our stay at Santa&#8217;s Lodge in this small <a title="Indiana Towns" href="http://littleindiana.com/category/littletowns/" target="_blank">Indiana town</a>, Kid #1 couldn&#8217;t believe it!</p>
<p>Breakfast with Santa took place at St. Nick&#8217;s Restaurant located off the lobby and downstairs at Santa&#8217;s Lodge.</p>
<p>We got a table by the window with a view of the spacious deck and the lake. It must be nice to sit out there in warmer weather!</p>

<p>I would, again, recommend changing up the times you normally eat so you can beat the crowd. We arrived at St. Nick&#8217;s restaurant slightly before 10 AM and had to wait for another table to finish up so we could have the baby seat.</p>
<p>That said, 10 AM was great! The place had pretty much cleared out, the buffet was still fresh, and we just about had Santa (and the buffet) all to ourselves.</p>
<p>The Breakfast with Santa buffet is <em>definitely</em> kid friendly: french toast sticks, pancakes, hash browns, and a few other choices. Both kids enjoyed it&#8211;and the baby really liked having another Christmas tree to ogle!</p>

There&#8217;s no better way to start the weekend right, in my opinion, than something fresh and warm and homemade from the oven.</p>
<p>We usually have baked goods throughout the week: muffins, waffles, pancakes, you name it, I probably make it. The problem? I sometimes wait until the last minute. That just doesn&#8217;t work for the usual cinnamon roll recipe &#8212; <em>enter these awesome cinnamon rolls!</em></p>
<p>I&#8217;ve been on the search for the perfect cinnamon roll for the past two years and so far &#8212; these rank high on  the list with hubs (and the kid, too, of course)! The fact that they don&#8217;t use yeast and so don&#8217;t require any rising time is just an<em> awesome</em> bonus.</p>
<p>I found this great recipe at <a href="http://the-still-waters.blogspot.com/2010/09/lovin-from-oven.html" target="_blank">Still Waters Blog</a>.</p>
<p><strong>Cinnamon Roll Dough:</strong></p>
<p>2 cups flour<br />
1 tsp baking powder<br />
1 tsp baking soda<br />
3/4 cup buttermilk (I used the old whole milk and lemon juice sub)<br />
1/4 cup oil</p>
<p><strong>Cinnamon Roll Icing:</strong></p>
<p><strong>Frosting</strong></p>
<p>3 Tbs soft butter<br />
3 Tbs soft cream cheese<br />
1 1/2 cups powdered sugar<br />
a few splashes of milk</p>
<p>Combine all roll ingredients together until dough forms. It will be sticky.</p>
<p>Toss some flour on your clean counter and roll out the dough into a rectangle (don&#8217;t forget to throw down the flour or it will be <em>exceedingly</em> sticky. Not that I did or anything).</p>
<p>Butter the dough generously with very soft butter (like 1/2 a cup generously).</p>
<p>Sprinkle on a mixture of:<br />
1/3 cup brown sugar<br />
1/3 cup white sugar<br />
1 Tbs cinnamon (I used probably 3/4 of a Tablespoon cinnamon. I&#8217;m all sorts of precise like that)</p>
<p>Roll it up and slice into 12 rolls. Place them in a buttered pan with enough space in between for the rolls to expand.<br />
Bake at 375* for 15 &#8211; 25 minutes depending on your oven. Watch those cinnamon rolls so they don&#8217;t get too dark!</p>
<p>Combine icing ingredients. Pour over warm cinnamon rolls. Share. Eat. Enjoy!</p>

<p>You won’t go wrong with Klein Brot Haus in <a title="Brookston, Indiana" href="http://littleindiana.com/category/littletowns/brookston/" target="_blank">Brookston, Indiana</a>. This small town bakery is fresh, priced right, and simply delicious!</p>
<h3><strong>Klein Brot Haus Bakery in Brookston, Indiana<br />
</strong></h3>
<p>Not only is Brookston, Indiana really cute but the bakery itself was situated in a fantastic old building with <em>really </em>sharp woodwork.</p>
<p>It sort of reminded me of the <a title="FingerHut Bakery in North Judson, Indiana" href="http://littleindiana.com/2009/09/fingerhut-bakery-small-town-bakery-super-selection/" target="_blank">FingerHut Bakery in North Judson, Indiana</a>. Definitely long on character!</p>
<p>They even had a selection of locally crafted goods. I saw an Indiana-shaped cutting board!  I’m thinking that I have to go back and get that one!</p>
<h4><strong>Klein Brot Haus Menu</strong></h4>
<p><em>Klein Brothers Bakery</em> had such an<em> awesome</em> selection.   Don’t think I use the word “awesome” lightly, either.In the case of Klein Brot Haus Bakery? It&#8217;s easily justifiable.</p>
<p>I’m talking pies, breads, croissants, cookies, and bars. It smells so incredibly good inside this rather large downtown business. They even had a breakfast and lunch menu plus a salad bar!</p>
<p>Klein Brot Haus had chalkboards hung up above the many, many shelves of baked items for sale. Not only was it a nice touch but it was helpful, too. It was easy to take it all in and find what you need in just a glance.</p>
<h4><strong>Brookston Bakery</strong></h4>
<p>What exactly did we need? Well, <a title="little Indiana and Family" href="http://littleindiana.com/about-me/" target="_blank"><em>little Indiana</em> and family</a> had to do a taste test, you know, in the interest of research! The gigantic Iced Cinnamon Rolls were calling my name. How could I refuse?</p>
<p>Hubs ordered a big Chocolate Croissant and the kid picked out a ginormous Iced Sour Cream Sugar Cookie. That cookie? Was so soft. Absolutely delicious! I should have got one for me!</p>

<p>I have no idea how it happened but somehow we didn’t buy anything extra! No loaves of freshly baked bread, no chocolate chunk cookies for the road, and no fruit pie for later. *insert sad face here*</p>
<p>Whatever were we thinking? Sigh. They had really fun and unique varieties of baked bread for sale.</p>
<h4><strong>Good to Go</strong></h4>
<p>We have GOT to make a return visit to this quaint <a title="Indiana Towns" href="http://littleindiana.com/category/littletowns/" target="_blank">Indiana town</a> and soon&#8211;and you do, too!  Klein Brot Haus, or Klein Brothers Bakery, definitely deserves the attention!</p>
