Best Cake Recipe: Chocolate Cupcakes

Though not as colorful as my Rainbow Cake Recipe, this Chocolate Cupcakes Recipe is a hit with grown-ups and kids–these are so moist and delicious!

I’ve been making this same recipe since I was 19 years old. Other cupcake recipes have come and gone, but none have compared to this one.

I always pair it with a Vanilla Buttercream Frosting. Yum!

Chocolate Cupcakes Recipe

Rating: 51

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 1 1/2 Cupcakes (I usually get around a dozen plus one or two)

Serving Size: 1 Cupcake

These delicious cupcakes are from The Complete Guide to Country Cooking, Reiman Publications, 1998.

I know a couple of Indiana town bookstores where you could probably look for a copy! It's one of my go-to cookbooks.

Ingredients

1 Cup Boiling Water
1 Cup Mayonnaise (real mayo, not a sub)
1 teaspoon Vanilla Extract
2 Cups Flour
1 Cup Sugar
1/2 Cup Baking Cocoa
2 teaspoons Baking Soda
Frosting

Instructions

In a mixing bowl, combine Water, Mayonnaise, and Vanilla Extract.
In a separate bowl, combine Flour, Sugar, Cocoa, and Baking Soda and add to the mix.
Beat until well mixed.
Fill greased or paper-lined cupcake cups 2/3 full.
Bake 350* for 20-25 minutes or until toothpick near the center comes out clean.
Cool for 10 minutes in pan, then remove to wire racks.
Frost when cool with your favorite frosting.
Store in the refrigerator.

These should be stored in the refrigerator.

Corner Cup Cafe: Walkerton, Indiana Mural

Downtown Walkerton, Indiana has quite a few really sharp buildings–you can’t help but notice the large mural painted on the side of the Corner Cup Cafe!

It’s sort of like an all in one Indiana coffee shop, chocolate shop, and cafe.

I love a good cup of coffee as much as the next guy. Here at Corner Cup Cafe, there are changing specials and a very large and impressive assortment of flavored coffees. Yum!

Add to that a seasonal menu and a nice selection on the usual menu, it’s easy to see why folks in this Indiana town don’t just eat and run–they linger.

We had lunch at this Walkerton staple. Well, lunch and coffee.

With an eye-catching bakery case of goodies (and chocolates by a famed big city chocolate maker), you can bet we threw dessert in there too! You knew that was coming, though, didn’t you?

I’ll admit it was hard to decide!

There were a few seasonal items that sounded so good. Cranberry Spinach Salad? How unusual! But…there was also a Reuben Sandwich on the menu. I am a creature of habit.

Luckily hubs was along for the ride and he doesn’t always want to get the same thing (though, really, I consider my Reuben Sandwich obsession more of a hunt for the best! It’s research, right?). He went for the Beef and Mushroom Panini.

Piping hot with melty cheese in all the right places, both of our sandwiches looked fantastic. Don’t you agree?

Danville, Indiana has so many good shops–I hope you can give yourself plenty of time to check them all out.

Confection Delights is just a block away from the square and has some of the more unusual chocolate confections I’ve seen yet!

They do chocolate here in this Danville shop. But more than the pretty little squares of chocolates that I love, well, they get really creative.

Victorian shoes, hearts, golf balls, ornaments–Confection Delights creates chocolate works of art that are as fun to give as they are to receive!

I’ll admit that I wasn’t sure what to do with it at first. Is it something to display or can I eat this? It was just so pretty! Luckily, I was right in assuming that it was chocolate or that could have been really embarrassing.

I also heard the cutest story–on Valentine’s Day, a husband and wife each came into the shop solo to buy chocolate covered strawberries for their other half! Is that not the cutest thing?

Indiana Sweet Shop

Danville, Indiana: Confection Delights Orange Creme Chocolates

Since Confection Delights sells their little gems of deliciousness individually, boxed, and in bulk, you can consider yourself set when it comes time to giving gifts.

But as for me? I’m going to go to another look at that Victorian Shoe that Hendricks County Tourism Department so kindly gifted to me, and by “take another look at” I mean I’m totally finishing it!

Cherry Chocolate Cookie Recipe

I have looked at the recipe for Cherry Chocolate Kisses countless times. Mixing it up from the usual Peanut Butter Blossoms (that I LOVE) seemed like a good idea. Now? I’m kicking myself for not making them sooner!

If you are a fan of chocolate covered cherries, you will want to try this recipe. If you are not a fan of cherries at all (like a few of our neighbor girls), you will want to make these cookies. Everyone loves them.

Somehow, it doesn’t taste like you are eating actual cherries. These may be my favorite cookie of all time. No kidding. Wait. Do I say that every time?

Cherry Chocolate Kisses Cookie Recipe

These are so good--but they are particularly tasty right out of the oven. Gooey chocolate, warm cherry cookie, well, if that's not perfection then I just don't know what is!

This is from Pillsbury Best Cookies Cookbook. It's a fantastic book--find it at an Indiana mom and pop bookshop near you.

Ingredients

1 Cup Powdered Sugar
1 Cup Butter, Softened
2 teaspoons Maraschino Cherry Liquid
1/2 teaspoon Almond Extract (I used Vanilla, because that's what I like!)
3 to 4 Drops Red Food Coloring (I used Pink)
2 1/4 Cups Flour
1/2 teaspoon Salt
1/2 Cup Maraschino Cherries, Drained and Chopped (I quartered them as best I could)
About 48 Milk Chocolate Candy Kisses, Unwrapped and Ready to Go!

Instructions

350* Oven.
Combine Powdered Sugar, Butter, Cherry Liquid, Extract, and Food Coloring in a bowl. Mix well.
Add Flour and Salt. Mix well.
Stir in the Cherries.
Shape Dough into 1" balls (or use a cookie dough scoop like I do for uniform, fast to drop cookies).
Place 2" apart on ungreased sheets.
Bake 350* for 8 - 10 minutes or until you can see that the lower edge is a light golden brown.
Quickly top each cookie with a kiss. Give it a second to melt and then twist it down a smidgen so it sticks.

The candy-lovers delight, you’ll find a whole range of sugary confections to satisfy your sweet tooth at this great Indiana candy store.

Gleaming glass containers hold a great variety of drool-worthy bulk candy. Clear glass jars just make it look good!

Kid #1 was completely taken with the Gummi Army Men. Is that fun or what?

Hubs also snuck in a bag of Gummi Bears in there, too. I guess he doesn’t like to share, either.

Indiana Candy Shop

Wabash, Indiana: Charley Creek Inn Candy Shop

There’s more than just candy at this Wabash County sweet shop. They carry a variety of fudge, other chocolates, and regional products.

But there’s more than candy and chocolate to this downtown locale–they’ve also got ice cream! It’s an ice cream parlor and sweet shop all rolled into one.

While there isn’t any Blue Moon ice cream (sad face) there are plenty of other yummy flavors.

The Charley Creek Inn Candy Shoppe is kind of your one-stop shop for fun treats, don’t'cha think? I’m pretty sure that Kid #1 would agree!

Since this is part of the gorgeous Charley Creek Inn, you know it’s also really nice and super clean. The people are always very friendly, too.

Nappanee, Indiana is thrilled about the new kid in town, Veni’s Sweet Shop!

Yes, Veni’s Sweet Shop is as good as it sounds.

Veni’s Chocolate Shop in Nappanee, Indiana

Nice and bright, this shop is so welcoming. Rows and rows of chocolates in all shapes, sizes, and flavors beg to be bought and eaten behind the shining glass.

I would be lying if I said I came out of Veni’s Sweet Shop empty-handed!

But it’s research, right? I mean, I don’t really even have a choice in the matter. I owe it to all of you to tell it like it is.

Indiana Sweet Shop

After an agonizingly difficult decision, I ended up with Orange Creme, Vanilla Creme, and Mint Creme. My favorite flavors right here in little Indiana! Awesome.

Smooth and delicious–there’s no additives, wax, or preservatives in these chocolatey bites of Heaven. You can definitely taste the difference. Fresh and fantastic.

At this Indiana candy store, the Orange Creme was my favorite!

Personally, I would love to do more research on Veni’s Sweet Shop. Seriously. Name the day!

More Than a Chocolate Shop

Veni's Sweet Shop: Nappanee, Indiana

This Elkhart County shop isn’t only for those who need a Chocolate fix (though it certainly does the trick!).

There’s a selection of nuts, candy, and even drinks–like an ice cream float or Hot Chocolate.

But more than that? I see Veni’s Sweet Shop as one more reason to bypass the big box shops and to support local business. Oh, how sweet it is!

Go There

A sweet shop is just what Nappanee needed! I can’t think of a better fit for this bustling Indiana town.

Puppy Chow Recipe

Quick snacks like this Puppy Chow Recipe are perfect for holiday celebrations–and beyond!

I don’t like spending days in the kitchen. But what I do like are simple, delicious recipes that can be easily thrown together.

Puppy Chow, or you may know it as the Muddy Buddy Recipe, is good stuff to have on hand and feeds a good-sized crowd! Pair this with Reindeer Mix and you’ve got enough to feed a few!

Puppy Chow Recipe

Another hand-written recipe I copied down before leaving home for the first time. I guess I wanted the essentials!

Ingredients

9 Cups Chex Cereal (I prefer Corn Chex)
1 Cup Semi-Sweet Chocolate
1/2 Cup Peanut Butter
1/4 Cup Butter or Margarine
1/4 teaspoon Vanilla Extract
1 11/2 Cups Powdered Sugar

Instructions

Melt Chocolate until Smooth. Stir in Peanut Butter, Butter, and Vanilla until smooth.
Add in Chex Cereal. Mix to combine.
Pour cereal into a plastic baggie.
Pour in Powdered Sugar.
Shake to coat.
Spread on Waxed Paper to set.
Store Covered.
