The sitter was on the way. I knew that our babysitter likes to cook, but doesn’t have a lot of experience. I wanted her to have something easy that I could begin and that she could finish off. I needed to find a good dinner recipe that I could mostly prepare ahead of time.
With time running out, I needed to find something that the sitter could handle and this Chicken and Broccoli Casserole recipe was it.
Chicken and Broccoli Casserole Recipe
I liked the idea of a one-dish sort of meal. It would keep down clean-up for the sitter while making it easy for me to prepare most of it ahead of time so she wouldn’t have to do much more than pop in the oven. Fast to prep, you begin by cooking the chicken. Cook the broccoli until it’s tender, being careful not to overcook it. You do not want mushy broccoli in this recipe.
You will combine the chicken soup, the mayo, cheese, and the curry powder (if you decide to use it). I did leave out the curry powder as I am out of it. I do think it would add a nice burst of flavor to this casserole. As it is, we absolutely loved the leftovers the next day just as well without it.
After that, you will pour it over the broccoli and chicken in the baking dish. You’ll top it with a combination of bread crumbs and butter–they add a fantastic, tasty crunch. Bake it and it’s ready to be savored.
Easy All in One Recipe
I left instructions for the sitter. I walked her through the recipe and left the cookbook open and at the right page. She had no trouble making it. Everyone absolutely loved this chicken recipe.
I didn’t have quite enough broccoli so I threw in slightly less than a half bag of frozen carrots. I also cooked a small, minced onion with the chicken. I hate to mess around with a recipe I had not yet made, but time was short and I had to get something ready to go right then and there. Heading to the grocery store was not an option.
Feel free to tweak it to suit your tastes. I think this recipe for Chicken and Broccoli Casserole makes a great base with which to play. I love a simple casserole. I don’t know why I don’t think to make them more often than I do.

Chicken and Broccoli Casserole Recipe
I used a combination of fresh broccoli and frozen carrots that I cooked with the broccoli. I also used a small onion that I cooked with the chicken.
Ingredients
- 3 Cups Broccoli Florets (1 1/4 lbs)
- 2 Cups Chicken, Cubed and Cooked
- 1 Can Condensed Cream of Chicken Soup, Undiluted
- 1/2 Cup Mayonnaise or Salad Dressing
- 1/2 Cup Grated Parmesan Cheese
- 1/2 Teaspoon Curry Powder (Optional)
- 1 Cup Soft Bread Crumbs
- 2 Tablespoons Butter or Margarine, Melted
Instructions
- Cook Broccoli in saucepan until crisp-tender. Drain.
- Place in greased 11 x 7 baking dish. Set aside.
- Combine Chicken Soup, Mayo, Cheese, and Curry Powder (if using). Pour over Broccoli.
- Top with Bread Cubes and Butter.
- Bake, uncovered, at 350° for 25-30 minutes or until heated through.
