Since the loss of my bread machine a few months ago, I’ve been combing through recipes for fuss-free bread. I was thrilled to discover this recipe for some of the best dinner rolls I’ve ever had. You see, my bread machine, a small appliance that I used all the time, moved around quite a bit whenever it was in use. Actually, it moved around a lot.
It moved around so much that it got to the point where I was taking a spice container and wedging it between the bottom of my upper kitchen cabinets and the appliance. It was the only way I could keep it from moving too far. Until one fateful day, when I must not have wedged it in there well enough. I didn’t even hear the container pop out from how I had it wedged. But I definitely heard the crash my bread machine made as it fell to the floor.
That was not a good thing. Fortunately, I sort of salvaged the dough I had inside. In the meantime, while I am on the hunt for a new bread machine, I am going to keep testing out recipes that don’t require a bread machine. I do have a KitchenAide stand mixer so I know I can at least use the dough hook if I so desire.

Dinner Rolls without a Bread Machine

Using your stand mixer, it’s not hard to create these buttery, soft, and irresistible rolls. I admit I haven’t used my stand mixer for much more than cookies and whipping up a cake. It’s about time I took advantage of its capability.
After all, the process of making bread using a stand mixer is much faster than using my dearly departed bread machine. There’s less kneading time involved. I don’t know, but from start to finish it seemed faster, even though it was more hands on.
There’s just one thing to remember about these rolls. Remember that it will take plenty of rising time, so plan ahead. They aren’t something you can tackle half an hour before you plan to serve dinner.
Also, take a look at the recommended water temperature for the brand of yeast you are using. Believe it or not, the recommended temperature actually varies between brands. If you’ve ever had a yeasted item rise less than expected (and it wasn’t old yeast), it might have been a difference in the temperature.
In the meantime, I suppose it’s time I start researching bread machines–my last one was as old as our first born. Seven years. If there’s a brand you love, I’d like to hear about it. In the meantime, I’m going to go snack on another roll.
Best Dinner Rolls Recipe
Dinner Rolls: No Bread Machine Required
I subbed in warm water and powdered milk so I wouldn't have to heat up the milk, too. It worked well!

Ingredients
- 1 1/4 Cups Warm Milk
- 2 teaspoons Yeast
- 1/4 Cup Sugar
- 1/4 Cup Butter, Softened
- 1 teaspoon Salt
- 1 Egg
- 3 1/2 Cups Flour
- 1/8-1/4 Cup Butter (Reserved)
Instructions
- Sprinkle the Yeast over Warm Milk and let sit for 5 minutes.
- Add Sugar, 1/2 Cup Melted Butter, Salt, and the Eggs. Mix well.
- Add Flour. Mix well.
- Blend on medium-low speed with your stand mixer 5-10 minutes.
- Cover bowl and let rise in warm place until doubled in size, about 1 hour.
- Punch down the dough.
- Let rise a second time, if desired.
- Divide into 18 rolls and place in greased 9 x 13 pan. The gaps will vanish as it rises!
- Cover and let rise for 20-30 minutes.
- Melt the reserved Butter and drizzle over the tops.
- Bake 400* for 10-15 minutes or until light golden brown.
