It’s a rather rich little cookie so less is certainly more in this case (and way cuter). I divided the dough in half by hand each time I used the 2 teaspoon-sized cookie dough scoop to try to lessen the size. That worked rather well even though they weren’t always uniform. A small scoop size would be ideal. These are thin so they can go from done to super burned rather quickly. No, I am absolutely not speaking from experience. I didn’t burn six cookies on accident. Not at all.
Presentation was not especially important to me, given that there was going to be a large percentage of children present, so I ignored the whole “pipe the filling onto a cookie” and opted to slap it on with a spoon. I’m all fancy like that. But really, when you make this for family or close friends, does it really matter? I think not, at least, not when these scratch-made Oreo© cookies were gobbled up so quickly that no one got a really good look at them! Homemade Oreo Cookies
Ingredients
Chocolate Sandwich Cookies
- 1-1/4 Cup All-purpose Flour
- 1/2 Cups Unsweetened Dutch Process Cocoa Powder
- 1/4 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- ¼ teaspoons Salt
- 1-1/2 Cup Sugar
- 1-1/4 Stick Room Temperature, Unsalted Butter
- 1 Large Egg
Cream Filling
- 1/4 Cups Room Temperature, Unsalted Butter
- 1/4 Cups Vegetable Shortening
- 2 Cups Confectioner's Sugar
- 2 teaspoons Vanilla Extract
Instructions
- Preheat oven to 375*.
- In the bowl of your electric mixer, combine Flour, Cocoa, Baking Soda, Baking Powder, Salt, and Sugar.
- On low, add in the Butter, and then the Egg. Combine.
- Scoop the dough onto a parchment paper-covered cookie sheet, using a small cookie dough scoop.
- Dampen your fingers.
- Gently press down and slightly flatten the batter.
- Bake for 9 minutes, rotating the pan halfway through.
Cream Filling
- Combine the softened Butter and Shortening.
- Gradually beat in the Powdered Sugar and the Vanilla Extract until light and creamy (approximately 3 minutes).
Making Sandwiches
- On cool cookies, slap a spoonful of the homemade cream filling smack dab in the middle and spread it around.
- Top with a matching cookie.
