When Kid #2 requested a Rainbow Cake for his birthday, I knew I had to find a great homemade white cake recipe to use for the base. This is it!

The last time I served this great homemade Rainbow Cake recipe, Kid #2 wasn’t even two years old yet. Then I remembered that he had been flipping through a cookbook and saw a colorful cake photo. I guess it jarred his memory!

This is a wonderful white cake recipe–and makes a very tasty rainbow cake, too!

White Velvet Layer Cake Recipe Perfect for Rainbow Cake

White Layer Cake

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: 1 three-layer Cake

Serving Size: 1 Slice

White Layer Cake

Ingredients

  • 1 Cup Butter, Softened
  • 2 Cups Sugar
  • 2 Egg Yolks, Beaten (Egg Whites are used in Frosting)
  • 2 Eggs
  • 3/4 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 1 Cup Buttermilk
  • 2 1/2 Cups Flour

Instructions

  1. 350* oven.
  2. Grease and Flour three cake pans. Set aside.
  3. Cream together Butter and Sugar.
  4. Add in Egg Yolks, then Eggs, one at a time. Beat well after each addition.
  5. Measure Buttermilk into a 2 Cup measuring cup. Stir in Baking Soda and Vanilla Extract.
  6. Alternate add in Buttermilk and Flour to creamed ingredients.
  7. For White Cake:
  8. Pour Batter into prepared pans.
  9. Bake 20-25 minutes
  10. Let cool before frosting with Seven Minute Frosting.
  11. For Rainbow Cake:
  12. Divide Batter between three bowls.
  13. Add in a generous amount of food coloring--not the liquid kind!
  14. Pour into prepared pans and bake as usual.
  15. Let cool before frosting with Seven Minute Frosting.

Notes

Do not use liquid food coloring for Rainbow Cake. You want bright, brilliant colors that the liquid stuff just can't do.

Frost with my favorite recipe for Seven Minute Frosting. The bright white, glossy frosting looks fantastic--and tastes delicious! The perfect finishing touch.
